I'm in the process in installing a Exchange 2003 enterprise server into an
existing Exchange 2000 Enterprise FE/BE configuration. Are there any issues
I need to be concerned with in adding an additional back end or front end
servers into my current installation. I plan to move the mailboxes between
information stores/server to migrate users to the new server.

Did you read the readme that comes with? Or the deployment docs?

You should be aware of the upgrade order for the FE/BE servers IMHO.
