I am currently involved in a project to upgrade our servers and at the same
time, restructure our DNS because the firms name has changed. I am setting
up a seperate domain with the 3 new servers that we bought and I am about to
setup exchange within this domain, but am unsure as to how I am going to
move the mailboxes and public folders to the new server in the new domain.
The old server is running Windows 2000 and Exchange 2000, and the new server
will be running Windows 2003 server and Exchange 2003. Is there an easy way
to do this, or does anyone have any other suggestions for the way I am going
about this?

Are the separate domain in the same forest? Or, you need a completely
separate forest and a new Exchange Organization?

If you only want to have a different email domain name
(mailbox@newdomain.com), you don't need to build a new AD. You can add a
new recipient policy for the new email domain name in your existing
organization.

I could add this new domain to the existing forest, but I have read in
Sybex's Mastering Windows Server 2003 that the Enterprise Admins group is
only in the first domain of the forest, so will I be able to get rid of the
first domain after the new domain is configured? Will the new domain
automatically be designated the first domain within the forest after the old
domain is removed?

Sounds that you need a new forest. However, I suggest you read the following
web site first (and also the links):
