I am new to Exchange and I need to roll it out for a client. Are there any
books that you could recommend?
The client is using SBS 2003.

There are 2 I'd recommend:

Exchange Server 2003 24x7 by Jim McBee
Learning Exchange Server 2003 by William Boswell
