How to trigger e-mail upon reservation to resource mailbox |

Morning,
we are in the process of converting from Lotus Notes to Exchange 2003 and
need to replicate the some of the same functionality that we have for
resource reservations on Notes.
I've got the room reservation thing down but am stumped on this one. On our
Notes system, when someone makes a room reservation they have the ability to
schedule a MEALS reservation for that meeting. Notes fires off an e-mail to
HR notifying them that a meeting has been scheduled that requires a meal.
Upon receipt of the e-mail notification, HR opens up the meeting request,
gets the number of people and orders the meals.
I can set up a MEALS resource mailbox but how do I get exchange to fire off
an e-mail, to the people I specify, once the MEALS resource mailbox receives
the reservation?
