My company is using Exchange Server 5.5. How can I force
all user's mailboxes to delete Emails within only the
Inbox, Deleted Items, and Sent Items if they are older
than 60 days? Any items that reside within a folder
created by a user such as a customer or supplier named
folder I do not wish to be removed.

Look into using Mailbox Manager.
