When we view an email that was sent to a user in active directory it does not
state the email address if was sent to. For Example: We have a user mailbox
for Joe but Joe receives email from joe@company1.com and joe@company2.com
based on the recip policy. When the email comes in that is sent to either
address it is to Joe and does not state the domain that was used. Is there
anyway to change this?

You'd need to look at the headers of the message in Outlook to see
where it came from.
You can also create a rule and select to move on receipt all mails
that came to a particular email address.
Exchange sees the person as opposed to the email address but at least
it keeps the destination address so that you can sort against it.
