Have you considered implementing something like Zantec EAS or Veritas KVS?
These are archiving softwares (I prefer EAS). You can utilize this to cut
back on some of the old data in your database (ex...all attachments that
haven't been accessed in 3 months get archived, but are still accessible to
the users).
My imagination leads me to believe that you have a lot of folks using your
Exchange server like a file server, mailing a file between each other. You
may want to consider implementing Sharepoint as you get a larger
environment. Exchange is not really a good product for Knowledge
Management.
As for the 200GB store, you may want to create an additional store or two
and split users between the stores and then decomm the large store. That
will definitely help with your backup times, which are probably taking quite
a few hours.
