Exchange Server

I have an Exchange 2003 server and have now purchased another Exchange
server which will be stored offsite. I want this server to be exactly
the same in case anything happens to the first one and so we can
continue to receive emails. Does anyone know how I can synchronise the
servers ?

There is no way to do this with only Exchange. You'll have to look at some
3rd party utilities such as Double-Take. Word from someone that has tested
several of theses applications, Xosoft will work great in a lab but fails
miserably under load.
