Does anyone know if there are any issues using Dynamic Disks for Exchange
2000/2003 Database or Logs? Or, any best practice on whether or not dynamic
disks should be used?

You can't use dynamic disks on an Exchange Server Cluster, but I'm not aware
os any problems using them on a standalone configuration.
