We are running Exchange 2003 with SPK2. Is it possible to add a disclaimer
that automatically attaches itself to every email sent out of the office?

You really need a 3rd party solution here. There are some that do it
for free, some that come with eval versions (GFI Mail Essentials eval
does not expire that bit) and some that come at a small price

I have added my disclaimer msg to outgoing SYBARI box, it works fine.
