Removing original 2000 Exchange Server

About a year ago we implemented a new MS 2003 Exchange cluster,
(Active/Passive), and migrated all mailboxes and Off-line Address book
to the new Exchange Server. Our original Exchange environment consisted
of Windows 2000 Server Exchange 2000 and Windows 2000 Domain
Controllers. Due to time constraints and other projects we never
removed the original 2000 Exchange Server from service. Now that things
have calmed down it's time to remove the original 2000 Exchange server
and recycle the server hardware. Since the 2000 Exchange server was the
original Exchange server in the domain I have a feeling that simply
uninstalling Exchange 2000 and removing the server from the domain is
probably a bad idea.

What would be the best and cleanest method that would allow me to
remove the original 2000 Exchange Server from the domain?
