Absolutely,
But first, let me give you my two-cents on NDRs. There are two MAJOR
reasons to just turn your NDRs OFF.
1) SPAMMERs will send e-mails to accounts at your domain that do not exist
(and probably never will). Having your NDRs on will tell them that there is
a domain there. So, now they know there is an active domain there for them
to repeatedly attack and they will keep sending spam looking for legitimate
accounts. Since 99 out of 100 e-mail accounts are the same as the user's
login, they now have 50% of that user's login information.
2) SPAMMERs will send you e-mail with other e-mail accounts listed in the
"ReplyTo:" field of the e-mail's header. That e-mail address is almost
always an illegitimate address, but the domain it is related to usually does
exists. Now, you are sending NDRs to an e-mail address that does not exist.
That can also be considered SPAM because it is unsolicited e-mail.
I know that when I receive NDRs for companies, and there were times I would
receive hundreds per day, I report them as spam to SpamCop.net because it
will eventually force the domain to deal with the spam in a more direct
nature.
Oh, and by the way, what I like better than NDRs is the DeliveryReceipt and
ReadReceipt options in Outlook. They work so much better.

Anyways, here is what you wanted:
From your Exchange System Administrator, right-click on the Default SMTP
Virtual Server (see the tree below for a quick reference to get there) and
click on properties.
First Organization (Exchange)
-- Administrative Groups
-- -- First Administrative Group
-- -- -- Servers
-- -- -- -- <SERVERNAME>
-- -- -- -- -- Protocols
-- -- -- -- -- -- SMTP
-- -- -- -- -- -- -- Default SMTP Virtual Server
Click on the "Messages" Tab, directly in the middle of the window, there is
a text box labeled "Send Copy of Non-Delivery Report to:"

If you decide to turn your NDRs off, which I suggest, uncheck the boxes on
the "Advanced" tab of the Default Properties page.
First Organization (Exchange)
-- Global Settings
-- -- Internet Message Format
Double-click "Default"
That is all you need.
