Upgrade to Exchange 2003 SP2. Then, with the MSExchangeIS Public
diagnostics logging category set to at least Medium, events are logged when
public folders are deleted (event 9682).

There is no information about it in Event-Log.
Technical details:
We use 1 "Microsoft Exchange Server 2003 Standard Edition" on "Microsoft
Windows 2003 Server Standard Edition CZ SP1" with "Microsoft Office
Outlook 2003 CZ".
