I have a global NAT pool of IP's provided by my T1 provider that act as the
external addresses of my servers. The Firewall maps them to the internal
IP's for connection. Should I be using the DMZ on the firewall to connect to
the exchange server? Currently an external global NAT ip is listed in my
pointer record with my domain provider. This ip is mapped at the firewall to
the exchange servers internal ip.

Placing Exchange in DMZ isn't recommended - it should be on the internal
network.
You can place a SMTP relay on the DMZ and point your MX to its A record in
public/external DNS.
