I once read a Microsoft TechNet paper that you should never install Outlook
on your Exchange server. Anyone know where I can find that paper? Thanks
for your help.

Microsoft does not recommend installing Exchange Server and Outlook on the
same computer:

You may be thinking of this (found using Google - an admins friend if ever
there was one..):
