When you take the test server off the network, you will never, ever bring
this back onto the network. If this is the case then on the test DC you need
to seize the FSMO roles, ie take over the schema master role on that server,
as you are not connected to the network Prod will not be affected.
Using Ntdsutil.exe to seize or transfer FSMO roles to a domain controller

Of course this all has to be done without affecting my very live
environment....
