At the moment the Exchsrv\imcdata\log contains over 15GB of
(looo*.log)files. The newer file dated today are the largest, and some are
over 3GB. This is eating up my HD and I am wondering if I could delete these
files without any problem.

The \exchsrvr\imcdata\log directory holds the log files that Exchange
generates when you turn on (or up) the level of diagnostic logging for
the SMTP protocol. You can safely remove all the files in this
directory, but only after you stop the IMS. I recommend that you
follow these steps:

In Exchange Administrator, select the IMS.
Select File, Properties to open the IMS Properties page.
Select the Diagnostic Logging tab, and reduce the logging level for
the SMTP Protocol Logging item to None.
Stop the IMS.
Remove the files.
Restart the IMS
