Are there any known problems with using Dynamic Disks with Exchange 2003 for
the DB and Log files?

IIRC, there's a whole discussion about it in the troubleshooting performance
guide or the disk guide for Exchange at
http://www.microsoft.com/exchange/library that you may find of value.

As a general rule, if you wouldn't use it for a cluster don't use it for
Exchange. Besides, what advantage do you hope to gain with one vs. the
other in your design?
