Local Domain name and exchange server |

When I build my clients AD domain, I always (mostly) use the .local for their
domain. Is there a way, when Exchange is involved, to get the exchange
server to reply or advertise itself as the .com.
For example, mycompany.local is local domain. MX is mail.mycompany.com.
When exchange replies or generates any messages from postmaster like
failures, it replies as servername.mycompany.local.
Anyway to modify this reply ?
Also, is there any place to find docs on how to properly setup exchange for
internet communications such as postmaster accounts, reverse DNS, etc. (I do
realize that reverse DNS is a function of a PTR record and handled by the
ISP...) I would like to look for docs on how to modify exchange's HELO
response without affecting mail flow. Like when someone telnet's to port 25,
have a small answer and not the entire exchange version, etc...
