Is there a way to change the Default SMTP Domain showing via IFS?

I have an AD running named thematrix. The intention for this domain was
to host many different companies files and mail, so therefor i chosed
an arbitrary name that isn't routable on the internet. I then created
one OU for each company and added their domain-name to the uPNSuffix,
so their users can logon using ie. dan@company.com.

I then installed Exchange 2003 and created the first store for a
company named nuna-it.gl. Sometimes later a new company, xpg.gl, was
added and i browsed to the default recipient policy to remove
nuna-it.gl from her, and set @thematrix as the default and then create
a recipient policy for each company.

But what happend? Now i couldn't browse the Public Folders, got an
error saying that the HTTP Service for Public folders couldnt be
contacted and my store properbly wasn't running. The odd thing was,
that it was, and i could browse it via my Outlook and OWA. After some
research i found out that it was because the default address in my
Default Recipient Policy didnt match the domain-name via IFS. I did a
subst to be able to browse the IFS and i was shocked to see that the
domain was named nuna-it.gl and not thematrix.

Why is this? And is there anywas to rename this? I have beein told that
EMS is using the exadmin dir in IIS, which is mapped directly to IFS,
and not the domain-name, to connect, and is using the default address
to correctly figure out which folder to look for in the IFS. That makes
sense, since EMS is only working when the default adress is @nuna-it.gl
and not when it's @thematrix.

Like i said, its in a hosting environment, so i would very much like to
be able to not having @nuna-it.gl figuring anywhere else, that in the
recipient policy for that company.

And since the name of the AD already is thematrix, im not sure of a
Domain Rename is the answer for my problem?
