Hi,
Not really an Exchange question, but here it goes:
We will soon start hosting our own email. I will have only one server
(SBS). let's say I have my email clients use this server for their
SMTP service to send emails from their remote locations.
If I have to take it down and they try to send email, how long will
it be before they get warnings and/or errors about sending email? If
the answer is 'it depends' then what would be typical and if it
depends on the client, assume XP or W2K and Outlook 2002-3.

Depends on their outbound SMTP server configs. Typical to see delay
notifications between 4-12 hours, and Non Delivery Reports (NDRs) at around
48 hours/2 days.
Always helps to get a backup MX, either outsourced (protects against ISP
connection outage) or in-house (can use IIS/SMTP, Exchange not required).
This enables you to have inbound mail queued up at backup MX and delivered
when your server is up.

Hi Bharat,
Yes, I was going to do that, but was unsure if would catch outgoing
mail as well.
