I think I may have messed up the permissions on our exchange 2003 server as
I can no longer backup using veritas (permisson denied using the
administrator account)

Any pointers please?

Have you been messing with permissions? I would expect Veritas has a
support article about what rights it needs to back the information store
up.

I think so.
I clicked off Allow inheritable permissions on an item that didn't look like
a user name.

Rule one applies - Don't mess with what you don't understand!
