There is the real problem though that has always been there. That is:
A user's mail box has multiple smtp entries in the mail box
properties box. I know you can choose and change the "Set as Reply
Address" on the server, but how can you change it on the fly from the
client?

You can't - it's controlled by the server. There are third party add-ins for
E2k/2003, but I don't know of any for 5.5.
