Currently have a 5.5 server in a single forest/domain with an Exchange
connector to a server in a different forest/domain with a two-way trust.

If I upgrade to 2003, can I expect the two-way trust to enable my users to
use the shared GAL or this there some new connector that I need.

You'll need a new connection strategy altogether. Check out the
multiple-forest considerations docs on Microsoft's site as well as the docs
at http://www.microsoft.com/exchange/library

The Microsoft recommended tool is MIIS or possibly the MIIS "lite" version,
IIFP.
