you can do both; set a quota and delete old mail
you can set a quota on either individual users through ADUC. select a user
properties, go to exchange general and storage limits. or if you want limits
for all users, you set it in the properties of the mailbox store (in
exchange system manager)
you can also purge messages from users. in exchange system manager, go to
recipients, recipient policies. create a new policy and select 'mailbox
manager settings'
give it a name then on the mailbox manager policy tab you can set the
parameters you want to purge messages based on age or size
