I have two companies with MX records recreated for both and a recipient
policy to allow both companies emailes to come in. I want to have for
example an employee that works for the both companies to have separate email
boxes setup. For Example: an email box for dave@company1.com and a mailbox
for dave@comany2.com. I want to have two totally separate email boxes with
the same name user names. How does one set this up? Right now the both
domains emails go to the same box and the user cannot distinguish from which
company the email was originally sent to.

You'll have to have something similar to this:

Live AD account + mailbox + dave@company1.com address
Disabled AD account + mailbox + dave@company2.com address + Live AD acct has
full mailbox rights.
